Ingredients
  

For the Salad:

  • 1 small head green cabbage, finely chopped
  • 1 large cucumber, finely diced
  • 4 green onions, chopped

For the Green Goddess Dressing:

  • 1 cup fresh basil leaves
  • 1 cup baby spinach
  • 2 cloves garlic
  • 1 small shallot, peeled
  • 2 tbsp chives
  • 2 tbsp lemon juice
  • 2 tbsp rice vinegar
  • 1/4 cup nutritional yeast
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1/2 tsp salt (adjust to taste)

Instructions
 

  • Prep the Vegetables:
    Finely chop the cabbage, dice the cucumber, and slice the green onions. Add all to a large mixing bowl.
  • Make the Dressing:
    In a blender or food processor, combine basil, spinach, garlic, shallot, chives, lemon juice, rice vinegar, nutritional yeast, olive oil, water, and salt.
    Blend until smooth and creamy.
  • Combine:
    Pour the green dressing over the chopped vegetables. Mix well until everything is evenly coated.
  • Taste & Adjust:
    Add more salt, lemon juice, or vinegar to balance the flavor to your liking.
  • Serve:
    Enjoy immediately for a crisp bite or chill for 30 minutes to enhance the flavor.
